I’ll be at school next week! I’ve done some reading around where charcoal is sourced from, off the back of some comments you’ve made before. I’d have had no idea how bad some of it is, so I’m pleased to be educated to make good choices.

Great piece on the provenance of charcoal. I also get my charcoal from Caradoc which is a blend of different, locally sourced hardwood.

I’ve made the Berbere before and they are banging.

Great read - thank you! Have a question around fire lighters - totally with you on the good charcoal but what is the equivalent best fire lighter?

Thank! Great Q. So, google natural firelighters... they are little twists of wood shavings dipped in wax. Love them, so easy to get hold of these days. I buy by the box of 500 coz I use then for classes, but you can just get domestic sized ones. Flamers are one good brand, there are many others

Thank you! Will see what I can find, I have been using them but wasn’t sure how sustainable/good they were (just that they were better than the white blocks of something flammable!)

Another good read. Already get my charcoal from W&F. So a big fan.

Looking at getting a new bbq, several Webers to choose from. Would like your pros and cons for them , is it worth getting all the bells me whistles or just a simple one? 🙏🙏🙏

Personally I prefer simple, no bells, no whistles. My current go to is the limited edition classic kettle. Charcoal baskets are a brilliant addition. Kettle shaped barbecues are my fave.
