... and the last class release for 2025 (including Christmas, shhhh)

Good morning Team Fire!

Summer is, as predicted, turning out to be absolute chaos. So many plates being spun and balls being juggled, I am surely dropping a few. And sadly my mum is super poorly so that’s another worry and pull on my time.

But the show must go on, and on it goes. Becky and I have gone through the diary all the way to the end of the year and pulled together the final list of class dates for 2025. More on those in a moment…

But first, there is a cancellation for next Friday’s American Low & Slow class. This class is super popular and fills up in a snatch so its a great opportunity if you want to learn more about classic Texas BBQ. We cover all things brisket - starting with trimming, what fuel to choose, how to set up your BBQ, why a water bath is a great tool for tenderness, all the way through to the stall and wrapping, and finishing with the all important rest. The whole shebang, everything I can teach you about brisket. There are also ribs and we make Texas hot link sausages along with a host of classic sides. And then we eat it. The best bit.
